Hey bloggies! I hope all of this crazy winter weather isn’t affecting you too much.
Two days ago it was warm and sunny enough to eat outside on the sorority’s sun porch.
It was so wonderful to soak up the sun before I had to run to my doctor’s appointment (more on that later though)
For lunch the sorority’s cooks were serving burger bar. The chefs usually offer beef patties, chicken or turkey patties as well as vegetarian. The vegetarian patties hadn’t come in yet and I was in desperate need of protein. So I topped my salad with the chicken patty.
Salad with tomatoes, bell peppers, corn, peas, avocado and broccoli with Annie’s Creamy Asagio Dressing.
I’m actually starting to like raw broccoli. So strange.
However this weather has got me running back to the nice, warm oatmeal for breakfast again.
Pumpkin Oatmeal
I forgot to top it with Almond Butter in this picture. I absolutely can not eat pumpkin oats with out it.
PB&J Oatmeal
An old favorite! Technically the toppings are almond butter & raspberry fruit spread, but you get the jist. I also added raisins, craisins and a mashed up banana to the oatmeal which added fantastic flavor and texture.
For a pre-workout snack I went with a Sunflower Seed Butter & Banana sandwich.
In a few healthy eating books that I have read, they have mentioned that the problem with getting people to eat fruits and vegetable is because it’s hard to advertise on them.
Chiquita–I should have known. To me it’s kind of frightening how they’re marketing for people to eat bananas because they’re fat free. Fat still has a negative connotation in our society which is so sad.
I’ve also been hitting up VitaTops for dessert
I warmed the vita top in the microwave for 15-20 seconds with the almond butter on top to create an ooey-gooey dessert. It’s also really great with honey!
Doctor’s Appointment
Despite having my ride fall through at the last moment, and scrambling to figure out how to get to the hospital for my doctor’s appointment, I hopped onto a bus and it took me straight there. I am so fortunate that Eugene has a great public transportation service.
I have had this appointment for what it seems like forever. 5 or 6 weeks maybe?
The appointment was with a Gastroenterologist to check out my stomach issues. The issues of:
1. Eating certain foods is painful to digest. Foods such as: citrus, grapes, soy sauce, teas, yogurt and cottage cheese. Apples and carrots too if there’s absolutely nothing in my stomach
2. I’ve had to miss class a couple of times because I would get stomach cramps from being just a little bit hungry. I eat lunch later than usual on Thursday because of my class schedule, and my stomach cramping always happened on Thursdays. I had to miss class twice because of this.
The doctor was really great (although I was incredibly intimidated at first) but said that it was basic Irritable Bowel Syndrome. It sounds so gross, but basically that some certain foods don’t agree with me and it causes uncomfortable stomach cramps. Apparently 1 in 6 people have IBS, and its most common in women. I didn’t know that!
I’m just glad that I’m not going crazy for my stomach really hurting when eating a lot of random foods.

Eek! Snow! There’s a chance the Bay Area here in California will be getting some snow in the next few days. Just trace amounts – but it’s still crazy! Stay warm.
What’s your favorite vita top, Let me know on my blog or e-mail me your favorites of which ones I should try… Also let me know how you made that delicious oatmeal (recipe/cals too please!)
Glad you found an answer to your tummy problems, and I hope they get better!
Aww I miss warm oatmeal… it’s too hot here for it!! Love eating outside on the porch too
I agree! It is so sad how they market fruits and veggies as Fat-Free! I’m glad that for that reason some people eat them, but shouldn’t we be eating them because they have so many nutrients in them???
At least you have an answer for why you were getting stomach cramps!
xoxox,
Kathleen
I want this cold weather to leave already! I’m so ready for the spring!
I remember thinking that fat was the enemy too. And to my surprise it was all the preservatives that they put in food to make them fat free!
How interesting. Lately (or for a while now) I’ve noticed my tummy has a hard time digesting yogurt. Or it just feels heavier than it should. I don’t think I’m lactose intolerant though….
Ugh girl I’m sorry to hear about the IBS. But I think it’s helpful that you’ve noticed a pattern in the foods that irritate you, so you can learn to avoid them and be pain-free!!
Love the “banana sandwich” idea. Yum.
i ve heard tons about IBS.. so you will be fine!! and YES On the nanner sandwich.. i eat those like twice a day hehe… HAAHHA ILOVE the banana advertising!
My mom has IBS and she sometimes takes milk of magnesia to help her stomach problems. I’m not sure if you’ve tried it, but it might help!
I love raw broccoli now too, its so good dipped in hummus! Sorry to hear about your IBS, good thing its not something worse! Hopefully now that you know what it is, youll be able to find some things that help the symptoms
I don’t know if you’ve thought about doing an elimination diet (or if it’s possible living in the sorority house), but that could help figure out what bothers you.
Also it could be food intolerances (lactose, gluten, fructose) – they’re often misdiagnosed as IBS.
Good luck with everything! I know how you feel – not so fun!
Actually that would be really interesting. I eliminated canned foods and preservatives from my diet this summer and felt so much better. It would be interesting to try it in the sorority house. I would probably be only eating salads though.
mmmm.sunflower seedbutter…ever since you sent me that jar..both my mom and i are HOOKED. we have to order it sometimes…b/c we can’t get it ANYWHERE near us!! i think i need to pop out another jar of pumpkin!! I hope your tummy gets better..that’s no fun at all. i found out awhile back i was acctually getting acid reflux and heart burn from sucrose(splenda!)..back in the days of Activia yogurt….no problems now!!
I’m glad you love the sunflower seed butter! And I’m glad you don’t have tummy problems any more. I had no idea splenda could do that to your stomach, but artificial sweeteners are scary in general so I really shouldn’t be surprised.
That’s great that they diagnosed you with IBS, but IBS really doesn’t have a clear definition. I feel like they put IBS on any stomach issue. I’ve been diagnosed with IBS for 3ish years and 7 months ago went gluten free and all my pain went away. The doctor never told me to do it, I just did. I have an endoscopy in April to test for Celiac Disease. I don’t think you should give up and just call it IBS, because it could be something more severe like Celiacs and that could really be hurting your body.
Good luck!
I have IBS, too!! …ew…that just sounded like im bragging about it. haha.
Hey! I just stumbled upon your blog through PB Fingers.
I normally don’t like oatmeal–but yours looks so good with the almond butter! I will have to give it a go again.
Glad you figured out your stomach issues–I’m sure you’re much more at peace now.
I would like to formally welcome you to the IBS club
I’ve been spying sun flower seed butter for a while now but haven’t splurged and purchased it yet. Yours always looks so delicious, though, so I think that might change this weekend!
I have several friends with IBS. For a few of them, it turns out that it’s more of a gluten intolerance than IBS. Once one girlfriend cut out gluten, she felt miles better.
Who needs a pb & J sammie when you can have them in oats?
And I love vitatops but never have i put almond butter on them! I must try asap. Hope everything goes well at your gastro appt. I too have an appt in a few weeks for my IBS. Lol my new post is about my ridiculous pain these past few days!!! Grrr
I have IBS which is basically catch all for “We have no idea what’s wrong with you…figure it out yourself.” I am totally jaded, I know! But seriously, I am so sick of doctor’s who diagnose people with IBS and give no further help.
I hope you feel better soon my friend!
Loving your new blog layout! never heard of vitatops before, I will definitely have to look them up! Seattle has been having insane weather lately too, so much snow and rain!
Sunflower seed butter is hands down my favorite right now. I’m actually out and will have have have to get more!
I’m sorry about your tummy troubles : (
my whole family has allergies/intolerances to all sorts of things, so I feel ya!
Love the banana “sandwich” how clever, my girls would def go for that! Sorry to hear about your tummy troubles!
Ooh, Sunbutter, I want to try it sooo bad!
just stumbled upon your blog! Love it!!!! This blogger boy is officially sold.
I think every food you listed on your “hard to digest list” is a staple in my diet. Yogurt! GRAPES. Cottage Cheese. oranges. APPLES. eek. girl I’m sorry!
Sorry to hear about your tummy troubles! I would agree with the commenter above who mentioned trying an elimination diet– gluten, soy and dairy are usually the common offenders, and many people have no idea how many products have them! Did you know that there’s gluten in many lipsticks?!
Also, have you ever tried food combining? If you’re not familiar with it, you can check out the food combining chart on my blog for a quick over-view, or if you want to read more about it, I recommend reading The Raw Food Detox Diet. Food combining totally changed my digestive system for the better, so I’m a big fan!
Good luck, and I hope it gets better for you!
Oh my gosh! Sunbutter and bananas are so awesome aren’t they? Actually ANY nutbutter is! LOL
Check out my blog if you’d like I am really new to blogging and would appreciate it so much!
